Liver Casserole



2 tbsp olive oil
1 onion, finely diced
1 carrot, finely diced
1 zucchini, diced
250g liver, sliced
1 sweet potato, diced
2 tomatoes, diced
½ cup water, if required


  1. Heat oil in saucepan and add onion, carrot, zucchini, and liver.
  2. Cook until the meat is browned.
  3. Add tomatoes, potatoes and water.
  4. Cook for another 5-10 minutes or until liver is cooked well.
  5. Pour ingredients into food processor and blend to desired consistency.

Cook Time: 25 minutes
