Beef Stew

You will need

1 tbsp olive oil
1 small brown onion, peeled and sliced
1 carrot, peeled and sliced
100g pumpkin, peeled and chopped
100g potatoes, peeled and chopped
400g fresh tomatoes, diced or reduced salt canned tomatoes
300g can of kidney beans, drained and rinsed
300g lean beef, trimmed of fat and cut into chunks
½ cup water
½ cup reduced salt beef stock
2 tbsp fresh parsley, finely chopped
1 bay leaf



Heat the olive oil in a frying pan over medium high heat, add the onions and carrots and cook until soft. Add the beef and cook until browned.

Place a large heavy based saucepan on medium heat and add the cooked meat, onion and carrot and all of the other ingredients. Cover and simmer for approximately 1½ hours or until vegetables and meat are tender, add more water if needed. The stew can be blended into a puree or mashed depending on baby’s age.
