1 tbsp peanut oil
1 onion, thinly sliced
½ tsp cumin
½ tsp coriander
½ tsp turmeric
400g pork fillet, trimmed and cut into strips
8 scoops of S-26 ALULA GOLD JUNIOR
1 red capsicum, diced
2 carrots, peeled and sliced
100g green beans, trimmed and chopped
¼ cup unsalted roasted peanuts, roughly chopped
3 cups steamed rice
Heat oil in a pan then add onion, cook until soft. Add the cumin, coriander and turmeric and cook for 1-2 minutes. Add the pork and stir fry for another 1-2 minutes.
Combine the S-26 GOLD JUNIOR and water then pour into the pan along with the vegetables. Bring to the boil and then simmer until vegetables become tender. Stir through peanuts and serve with rice.
