Veggie Patties



1 eggplant, peeled and cubed
¾ cup rice, cooked
1 small carrot, grated
1 small zucchini grated
1tsp olive oil
1 tbsp water
3 tbsp plain flour
1 egg yolk
½ cup cheese, grated
½ cup zucchini, grated


  1. Add eggplant, carrot, zucchini and water to microwave safe bowl and cook on high for 3 minutes, drain any water and allow to cool.
  2. Pour all ingredients into a bowl and stir until combined.
  3. Heat olive oil in a pan, and then add spoonfuls of mixture, flattening to form a pattie.
  4. Cook each side for 3 minutes.

Prep Time: 5 minutes

Cook Time: 20 minutes
