Apple and Pecan Cookies

You will need

2 tsp maple syrup
100g unsalted butter or margarine, softened
100g brown sugar
1 tsp vanilla extract
1 egg, lightly whisked
1 cup plain flour
½ tsp baking powder
½ tsp ground cinnamon
¾ cup dried apple, finely chopped
¼ cup pecan halves, finely chopped


Preheat the oven to 180°C. Line two baking trays with paper. Beat the maple syrup, butter or margarine, sugar and vanilla together until soft and creamy. Mix in the egg and then add the flour, baking powder and cinnamon stirring until combined. Stir in the dried apple and pecans. Spoon a teaspoon of mixture onto the trays, leaving 1cm between the biscuits to allow for spreading. Bake biscuits for 10-12 minutes or until golden. Leave on tray to cool.
