You will need
4 large potatoes, peeled
½ medium sized cabbage, shredded or any left over vegetables such as carrots, brussel sprouts and peas
½ cup tasty cheese, grated
20g butter
Salt and Pepper to season
Canola oil
In lightly salted water boil the potatoes until soft. Place cabbage in to a pan, add a little water and cover, turn heat to medium and steam for 5 minutes, stirring occasionally, add a little more water if the cabbage is boiling dry. Once the potatoes are boiled, drain, add cheese, butter and mash. Season with salt and pepper to taste. Add the Mashed Potato to the cabbage or left over vegetables and mix well.
Set aside to cool and form into patties.
Heat canola oil in a non-stick fry pan, add patties and fry gently until each side is golden and hot in the centre.
