Mango and Apricot Chicken



2 chicken breast
1 tbsp dried apricot pureed
1 tbsp mild mango chutney
3 tbsp mayonnaise (no whole egg mayonnaise)
1 tbsp lemon juice
¼ tsp garam masala


  1. Preheat oven to 180°C.
  2. To make the sauce combine all ingredients, except for the chicken into a mixing bowl, combining well.
  3. Place 2 chicken breasts in an ovenproof dish and cover with the sauce.
  4. Cover the dish with foil and bake for 30 minutes.
  5. Serve with rice or potatoes.
